MANKATO — An on-farm flour milling operation, the first in Blue Earth County, got approval from the County Board Tuesday morning.
Rachel and David Hollerich, who run a farm a few miles east of Good Thunder, can now mill up to 2,000 pounds of flour per week.
While flour mills of the past were factories, the mill to be used by the Hollerichs is no bigger than a dishwasher and about as loud as a vacuum cleaner, Rachel Hollerich said.
"People think of a factory when you say a 'mill,' but you really don't need that," she said.
