MANKATO —
A Mankato IHOP restaurant is in the works at a Madison Avenue location.
The spot, at the corner of Madison Avenue and Raintree Road, is currently occupied by a Cub Foods parking lot.
Community Development Director Paul Vogel said the city has been encouraging stores with large parking lots to make part of them available for re-use.
An internal city staff committee recently reviewed a site plan for the restaurant, though it has not yet been approved by the City Council.
IHOP, short for International House of Pancakes, specializes in breakfast foods but also has a lunch and dinner menu, according to the company’s website.
There are almost 1,500 IHOPs in the country, and nearly all are owned by independent franchisees, according to the site.
